Chicken Cordon Bleu

Charlie’s Pride Kurobuta Ham is rolled into lightly breaded chicken breasts with Swiss cheese and herbs, then baked to golden brown.

Ingredients
¼ lb. Charlie’s Pride Kurobuta Ham, thick sliced
4 Chicken breasts, skinless and boneless
¼ cup Yellow mustard
4 slices Swiss cheese
¼ cup All-purpose flour
1 cup Panko
4 sprigs Thyme, leaves only
2 sprigs Marjoram, leaves only
1 Garlic clove, minced
2 Tbsp. Butter, melted
2 Eggs
  Salt and pepper, to taste
  Non-stick cooking spray
Directions
  1. Preheat oven to 350°F.
  2. Lay chicken between two pieces of plastic wrap. Using the flat side of meat mallet, gently pound chicken to ¼ inch thickness.
  3. Brush chicken with mustard and lay one slice each of Charlie’s Pride Kurobuta Ham and cheese.
  4. Tuck in sides of breast and roll tight.
  5. Season flour with salt and pepper.
  6. Mix panko with thyme, marjoram, garlic, salt, pepper and melted butter.
  7. Beat together eggs.
  8. Lightly dust rolled chicken with flour, then dip in egg mixture and coat in panko mix.
  9. Coat baking sheet with cooking spray. Transfer chicken to baking sheet.
  10. Bake 20-25 minutes until browned and cooked thoroughly.
